Matt and I tried a new recipe tonight. I was CRAVING Sloppy Joes -- thanks to my friend, Kimber, who mentioned it last week! I couldn't get it off my mind! :) Ha! I asked Matt if he would want it for dinner one night -- he initially didn't want to because they aren't the healthiest. Well, that comment did NOT stop my craving, so, as all good wives do, I "Googled". *Gosh, what did the world do before Google?!*
Low and behold, I found a HEALTHY Sloppy Joes recipe. It took a little bit of convincing, and some bargaining -- I agreed to eat meatloaf (*TRY meatloaf*) if he would eat my Sloppy Joes. I went to HEB today and gathered the ingredients:
1 pound ground beef -- I got the 96%
1 large green pepper
1 large onion -- I got a sweet onion
1 1/2 cans of tomato soup
We chopped the onions and green pepper and added it to the meat.
We cooked the meat and vegetables for 10 minutes. Then we added the tomato soup.
We let that simmer for 10 minutes (on low - covered) and TA-DA! Done! :) I served it on a wheat bun and we had strawberries and Doritos (the baby craved Doritos -- baby baby)! :) It was AMAZING and Matt had 2 sandwiches! I guess I better prepare myself for the meatloaf! :) HAHA!
